. . . por fin volví a comer un buen Choripan, cosa que no hacía desde la última visita (en Oaxaca) de nuestro amigo Cesar Olguin, un gran bandoneonista
Argentino con buenas dotes para la cocina de su país.
Para que un choripan sea un
"buen choripan", se necesita un buen pan, un buen chorizo y un buen chimichurri.
Aquí en
Los Tuxtlas conseguir un buen pan es mucho pedir, así que hay que usar el que hay, o bien hacerlo uno mismo.
Conseguir un buen chorizo argentino no es difícil es cosa de tiempo y salvar distancias, o bien hacerlo uno mismo.
En el caso del
chimichurri eso es otro boleto, hay que tener disposición e inspiración y amor a la cocina, además de los ingredientes necesarios, buen
aceite, el ajo necesario, el comino y orégano suficientes, la justa cantidad de buen vinagre, además de la consabida sal y pimienta recién molida y por
supuesto lo que le da el toque maestro de sabor y color: el ají y el perejil. Hay quienes le ponen jugo de limón y hay versiones en las que se le agrega cilantro,
allá cada quien.
Yo lo único que le quería decir es: " POR FIN VOLVI A COMER UN BUEN CHORIPAN DESDE LA ULTIMA VISITA DE CESAR OLGUIN"

(. . . finally I have again eaten a good Choripan, something I have not done since my last visit (in Oaxaca) with our friend Cesar Olguin , an
Argentinean singer/songwriter with a fine talent for the cooking of his country.
For a Choripan to be a "good Choripan", you need good bread, a good sausage, and a good Chimichurri. Here in Los Tuxtlas it is asking a lot to acquire
good bread; you have to make do with what is available or make your own. You can find good Argentinean Sausage if you are willing to spend the
time and travel the distance necessary; or better still, make your own. The case of a good
Chimichurri is another matter. You need to have the
disposition, inspiration, and love of the kitchen; plus the necessary ingredients: good Olive Oil, the needed garlic, sufficient cumin and oregano, the
proper amount of vinegar, salt and freshly ground pepper; and certainly - the master's touch of color and flavor: chili and parsley. There are those
who add lemon juice and cilantro. The only thing that I want to say is: FINALLY I HAVE AGAIN EATEN A GOOD CHORIPAN . . . (In Café "Tu Casa" -

diversas variedades de artesanías y mucha ropa muy linda y de muy buen precio. El lugar cuenta con mesas si quieres pasar un buen momento tomando
una tasa de café y leyendo un buen libro. Esta situado a un costado de la iglesia.

I finally got by Tesoro for breakfast. I took Peter. . . It was definitely the best breakfast I have had in Catemaco. Peter . . .  loved the omelette, tea,
english muffin and the presentation.  I like what they did upstairs (
the loft) also. . . .  
We will be back. It will be hard for me to eat many breakfasts at other places now.

. . . but yesterday we found a wonderful café where they have wireless internet, we asked if we could use it and they were soooo kind to us, so we took a
seat. And it's definitely going to be our new favourite place. It's called "Café - La Casa de los Tesoros" - The house of treasures. And it really is. Apart
from being a café, they also sell art and clothes, and it's just so wonderful, the things that they have there, I could fill my suitcase . . . And we're just so
happy that we found this place, so we hope its ok that we keep sitting there, cause we love it. And they have good tea and good coffee and good
tiramisu, and we can't wait to try their brownies and chocolate cake.

Cool new hangout in Catemaco
My friend Pete’s daughter Jessica has recently opened La Casa de los Tesoros, a second floor retreat from the sultry streets of downtown Catemaco.  It's
located on the Zocalo, across the plaza from the Hotel Catemaco, and offers craftwork and clothing from throughout Mexico (Jessica comes to Oaxaca
fairly regularly on buying trips).  It also offers freshly brewed organic coffee, tiramisu made by a local chef, and brownies made by Jessica.  They
may even take my suggestion and have a small lending library available to local book-starved literati!  It's also a place where you can get tourist
information, and is a branch office for the
Defensores del Medio Ambiente de Los Tuxlas, A. C. (Defenders of the Environment of Los Tuxtlas) a
group that receives complaints regarding wildlife or environmental abuses, offers environmental workshops, and other activities related to
environmental conservation.  They accept donations and memberships for their good work.
So if you're headed for Catemaco, prepare for a real treat!
